Calorie and allergen card for a new dish
Use when a chef, menu developer or chain R&D lead is adding a dish and needs a calorie estimate and allergen statement before menus print. Builds the recipe's nutrients from USDA FoodData Central, reads Open Food Facts for branded components' allergens and additives, and checks FDA food recalls for each supplier brand. Produces a draft card clearly marked as an estimate.

# Calorie and allergen card for a new dish For a recipe with gram weights per portion and the brand of any packaged component (sauces, breads, cheeses). ## 1. Whole-food nutrients 1. Search each raw ingredient with @[USDA FoodData Central · Search foods](alexandria:fdc-nal-usda-gov/foods/search_foods) (prefer Foundation or SR Legacy data types) and keep the best **fdc_id**. 2. Read each with @[USDA FoodData Central · Get food](alexandria:fdc-nal-usda-gov/foods/get_food): energy, protein, fat, saturated fat, carbohydrate, sugars and sodium per 100 g, scaled to the recipe's gram weight. ## 2. Branded components 3. Find each packaged component with @[Open Food Facts · Search](alexandria:world-openfoodfacts-org/foods/search) (`brand`, `query`) and keep the **barcode**. 4. Read @[Open Food Facts · Product](alexandria:world-openfoodfacts-org/foods/product): **allergens_tags**, **ingredients_text**, **additives_tags** and **nutriments_100g**. Use these nutrients for the component and carry the allergens forward. ## 3. Supplier check 5. Search @[FDA · Food recalls](alexandria:fda-gov/records/food_recalls) for each supplier brand. Recalls for undeclared allergens are the ones that matter most for a menu statement. ## Write the card - **Per portion:** calories and the main nutrients, with a per-ingredient table showing the source record for each line. - **Allergen statement:** the major allergens present from any component, and the components that carry them. - **Caveats:** cooking losses and oil uptake are not modelled; this is an estimate, not a lab analysis, and any legal menu labelling must be confirmed by the operator. - **Sources:** cite each figure to its capability and record id. Say which components could not be matched rather than guessing.
